Blue Corn Tortillas

Ingredients

  • 1 cup blue corn masa harina

  • 1/4 teaspoon salt

  • 1 cup warm water

  • extra flour for dusting

Tools Needed:

  • 1 large bowl

  • 1 set of dry measuring cups

  • 1 liquid measuring cup

  • 1 set of measuring spoons

  • 1 wooden spoon

  • 1 tortilla press

  • plastic wrap

  • 1 spatula

  • 1 clean dry cloth

  • 1 griddle or large skillet


Steps:

  1. Stir the masa harina and salt together in a large bowl. 

  2. Add the water. Mix with a wooden spoon or with your hands until a soft dough forms. 

  3. Turn the dough out onto a clean surface that is lightly dusted with flour. Imagine the dough is a pizza and cut it into 10 equal pieces. Roll each piece into a ball. 

  4. Use the tortilla press to form the tortillas. If you do not have a press, you can use the bottom of a heavy frying pan. To keep the dough from sticking to the tortilla press, put a piece of plastic wrap (or a plastic bag) on the bottom surface of the press. Place a ball of dough in the center of the plastic. place another piece of plastic wrap on top of the dough. Press the dough flat in the press. (the plastic can be reused.)

  5. Pick up the tortilla with the plastic on both sides. Peel off one piece of plastic. Flip the tortilla off of the other piece of plastic onto a hot griddle. Cook for 1 to 3 minutes, until the bottom of the tortilla becomes golden. Flip the tortilla and press lightly with a spatula. Cook for 1-3 minutes more, until the tortilla is cooked. Transfer the tortillas to a plate and cover with a clean dry cloth to keep warm.
