Fried Plantains (Patacones)
Ingredients
3 very ripe plantains
1/2 cup vegetable oil
Pinch of salt (optional)
Tools Needed:
1 chef’s knife
1 ruler
1 cutting board
1 large skillet
1 set of tongs
1 plate
paper towels
1 tortilla press (optional)
Steps:
Peel the plantains and cut diagonally into 1/2-inch thick slices.
In a large skillet, heat the oil over medium-high heat. Add the plantain slices to the skillet in a single layer. Cook about 2 minutes per side until golden brown.
Remove the plantain slices with tongs and place on a plate lined with paper towels. Sprinkle with salt, if desired. Allow to cool slightly.
Optional step for extra crisp plantains: place fried plantains individually on a tortilla press and flatten to 1/4-inch thickness. Fry again a in a large skillet with oil over medium-high heat, for 1 to 2 minutes per side. Place on a plate lined with paper towels to cool slightly.
