Red Pepper and Black Bean Salad

Ingredients

  • 1 large yellow bell pepper

  • 1 large red bell pepper

  • 1/4 medium red onion

  • 1/4 cup fresh Italian parsley

  • 1/2 cup fresh cilantro

  • 2 cloves garlic

  • 2 (15 oz) cans black beans

  • 4 Tbsp red wine vinegar

  • 2 Tbsp olive oil

  • 1/2 tsp salt

  • Pinch of black pepper

Tools Needed:

  • 1 knife

  • 1 cutting board

  • 1 large bowl

  • 1 slotted spoon

  • 1 colander

  • 1 can opener

  • 1 whisk

  • 1 set of dry measuring cups

  • 1 set of measuring spoons

  • 1 small bowl


Steps:

  1. Wash produce and set aside. Remove stems and seeds from both bell peppers. Cut bell peppers into strips. Dice the strips and add to the large bowl. Dice red onion and add to the large bowl. Mince garlic and add to the large bowl with bell peppers and onion.

  2. Chop the parsley and cilantro. Add to the large bowl.

  3. Open both cans  of black beans. Drain and rinse the beans using the colander. Place in the large bowl with the other ingredients and mix together.

  4. In a small bowl, whisk together the red wine vinegar, salt, pepper, and olive oil until well-combined. Add to the large bowl and mix well before serving.
