Watermelon Arugula Salad

Ingredients:

  • 1/2 pound baby arugula leaves

  • 2 pounds seedless watermelon

  • 1/3 cup olive oil

  • 1/4 cup lemon juice (2 lemons)

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 1/2 pound Parmesan cheese

Tools Needed:

  • 1 colander

  • 1 large bowl

  • 1 small bowl

  • 1 chef’s knife

  • 1 cutting board

  • 1 liquid measuring cup

  • 1 large metal spoon

  • 1 set measuring spoons

  • 1 juicer

  • 1 whisk

  • 1 set tongs

  • 1 box grater

  • 1 plate


Steps:

  1. Wash arugula, then dry leaves and place them in a large bowl.

  2. Cut watermelon into 3/4-inch cubes. Add to the large bowl with arugula

  3. Juice the lemon to collect 1/4 cup lemon juice and place in a small bowl.

  4. Add the olive oil, salt, and ground pepper to the small bowl with the lemon juice. Whisk well to form a dressing.

  5. Pour the dressing on arugula just enough to moisten it. Toss well with a pair of tongs.

  6. With a box grater, carefully shave the Parmesan. Sprinkle the cheese and kosher salt on each serving of salad and enjoy immediately.
