Asian Cucumber Salad

Ingredients:

  • Dressing

  • 2 Tbsp white miso paste

  • 1/3 cup rice vinegar

  • 1 Tbsp sugar

  • 2 Tbsp shallot1/2 cup vegetable oil


    Salad

  • 2 cucumbers

  • 3 radishes

  • 1 Tbsp toasted sesame seeds

  • 5 oz arugula

Tools Needed:

  • 1 cutting board

  • 1 chef’s knife

  • 1 small bowl

  • 1 large bowl

  • 1 whisk

  • 1 liquid measuring cup

  • 1 set of measuring spoons

  • 1 set of tongs


Steps:

Dressing

  1. Add miso paste, rice vinegar and sugar to a small bowl.  Mince shallot and add to bowl.  Slowly pour in vegetable oil and whisk to mix together. Set aside.

Salad

  1. Slice cucumbers lengthwise and remove seeds with a spoon. Laying the flat side down, slice the halves into 1/4 inch slices.

  2. Thinly slice radishes and add to a large bowl.

  3. Just before serving, add arugula to the bowl and pour dressing over salad, tossing well until fully coated.
