Asian Cucumber Salad
Ingredients:
Dressing
2 Tbsp white miso paste
1/3 cup rice vinegar
1 Tbsp sugar
2 Tbsp shallot1/2 cup vegetable oil
Salad
2 cucumbers
3 radishes
1 Tbsp toasted sesame seeds
5 oz arugula
Tools Needed:
1 cutting board
1 chef’s knife
1 small bowl
1 large bowl
1 whisk
1 liquid measuring cup
1 set of measuring spoons
1 set of tongs
Steps:
Dressing
Add miso paste, rice vinegar and sugar to a small bowl. Mince shallot and add to bowl. Slowly pour in vegetable oil and whisk to mix together. Set aside.
Salad
Slice cucumbers lengthwise and remove seeds with a spoon. Laying the flat side down, slice the halves into 1/4 inch slices.
Thinly slice radishes and add to a large bowl.
Just before serving, add arugula to the bowl and pour dressing over salad, tossing well until fully coated.
